This is going to be a light travel year for us until our honeymoon, so when my parents offered to take us to Vermont for a weekend, we jumped at the chance. My family has been to Vermont many times, but it’s been several years since my last visit. I could not wait to show Tom how incredible it is.
We left early Saturday morning only stopping for lunch in Lake George. We were very sad to find out that Suttons one of our favorite lunch spots in the area had closed. Plan B was a favorite of my grandparent’s called The Silo. It’s serves up soups, sandwiches, salads, and burgers. They even have a really cute gift shop selling souvenirs, fudge, and homemade donuts!
I ordered half a tuna salad sandwich and a large cup of split pea soup. Tom had a version of a turkey melt. This place has huge portions sure to keep you full all day! Everything is homemade and super tasty!
Back on the road after lunch. It was another hour and 1/2 before we hit Middlebury, Vermont. Once there, we checked into Swift House, one of the cutest and nicest inns I have ever seen. The staff was super friendly (shoutout to Jacklyn and Michael).
Jacklyn took us on a quick tour of the main house and then the gatehouse where we were staying. We then spent a little time unpacking before heading over to Otter Creek Brewery.
At Otter Creek, Tom and I split two of their featured flights one from the Shed (brewery within Otter Creek) and another from Otter Creek.
Both flights were very tasty! Our favorites included the Shed Mountain Ale and the Drip Drop Coffee Stout, but we enjoyed them all!
My Dad opted for a pint of the Hellbrook Pilsner. It is light and super drinkable, but still packs a ton of flavor. We highly recommend it.
After our pre-dinner drinks, we drove over to American Flatbread. This is one place that you MUST check out if you are ever in Vermont. They have a few locations serving up uniquely flavored pizzas.
Tom and I started with the evolution salad and my parents shared the Vermont charcuterie board. Then, it was time for all the pizzas. My parents shared the Medicine Wheel (house made organic tomato sauce, fine whole milk mozzarella, Italian grana padano cheese, fresh herbs). It had all the classic pizza elements, but these ingredients took it to the next level.
Tom ordered the Pepperoni and Peppers (all natural nitrate-free pepperoni, organic green peppers, red onions, organic tomato sauce, fine whole milk mozzarella, italian grana padano cheese, fresh herbs). I chose the Roasted Tomato Salsa flatbread (house made salsa [wood-fired roasted organic tomatoes, organic garlic, onions, cilantro], organic corn, organic black beans, vermont cheddar, fresh herbs). Everything about the food at this place is killer! Everything is so fresh and tasty. It’s definitely a must do for sure.
The next day it was time to hit the slopes, but, before doing so, we needed some serious fuel. Lucky for us, Swift House offers a free breakfast on each morning of your stay and the food is excellent. On the first morning, Tom had yogurt and granola and I opted for scrambled eggs with a perfectly toasted english muffin.
For our day of skiing, we hit up the Middlebury College Snow Bowl. This is our absolute favorite place to ski. It’s a medium size mountain with tons of terrain option and plenty of space. It also never gets super crowded unless it’s a race day for the school.
The skiing/snowboarding was absolutely incredible that morning. It wasn’t too cold and the conditions started out perfect. We had an incredible time.
On top of it being an awesome place to ski, it’s also one of the most beautiful places you will ever see. Look at those views!
After skiing, we had a quick lunch in the lodge which was very tasty and reasonably priced for lodge food. Tom got a burger and I had broccoli cheddar soup.
When we got back to the inn, we got cleaned up and relaxed before dinner. We spent our time reading and playing cards by the fire.
After our relaxation, we went into town to check out a few local shops. It was so cold so we didn’t last long. Then, of course, we needed a cookie and hot chocolate break. Both are complimentary at Swift House.
Dinner that evening was enjoyed at the Swift House restaurant, Jessica’s. It’s a classic American eatery featuring fresh local ingredients from Vermont farms. This restaurant is an experience. The atmosphere is wonderful and the staff friendly. Every bite is also incredible.
I decided to start with the brussel sprout salad ( shaved sprouts, red onion, cob-smoked bacon, Marcona almonds, dried cranberries, asiago, lemon honey mustard vinaigrette) then enjoyed a local cheese plate as my entree. My plan was perfect because I had enough room for dessert.
Tom opted for the Caesar salad and then ordered the pork chop for his dinner (Frenched bone-in loin, caramelized sweet onions, apple bourbon brown sauce).
For dessert, I ordered the maple creme brûlée. Though the texture could have been a bit smoother it was a very tasty end to an incredible meal.
After dinner, we went over to the bar for one final drinkie-pooh before heading off to bed. The next day we enjoyed our last breakfast before hitting the road back to my parents to tend to some wedding planning.
Vermont is an absolute wonder place to spend a long weekend. The food, the activity, the relaxation.. it’s great! We cannot wait to go back.. hopefully next year.
